Homemade Vegan Bagels | The Healthy Life

Is there anything better than a toasted wholegrain bagel with guacamole on for breakfast? I doubt it! But what if you're craving said bagel on a Sunday when all the shops are closed and you don't have any at home? You simply make them yourself! :) That's what I did last week when I came across this super easy recipe for seedy bagels that is 100 percent vegan and 100 % delicious!

Here's what you'll need:

350g spelt flour
200g wheat flour
1 package dry yeast (without emulsifying agent)
2 tbsp caster sugar
2 tbsp salt
270ml warm water
60ml olive oil
3 tbsp sun flower seeds
3 tbsp sesame seeds
3 tbsp pumpkin seeds
3 tbsp flax seeds
3l water + 1 1/2 tsp salt

Here's what you'll need to do:

Mix the yeast with the one tbsp of the sugar and and dissolve it in the warm water. Put aside.

Now mix your different types of flour with the rest of the caster sugar and the salt. Add your yeasty water as well as the olive oil and knead for about 10 minutes until the dough is smooth and only slightly sticky.

Mix all the seeds in a different bowl then add 2/3 of it to your dough and put the rest onto a plate.

Cover and leave your dough to prove in a warm place for at least 1 hour. After that give it another good knead (if it's still too sticky to handle you might wanna help with a sprinkle of flour). Split your dough in 8 similar sized pieces (the recipe said it would make 10 so go ahead and try to get 10 out of it but I was content to make eight haha). Form little balls of the dough then use the end of a wooden spoon to put a hole in the middle of them. Gently widen these with your fingers. Put your finished bagels on a baking tray lined with greaseproof paper and let proof for another 30 minutes.

In the meantime bring the salted water to a boil (use a big pot here!).  Then slowly put your bagels in two at a time (if your pot is bigger than that go ahead and make use of that by putting more bagels in), and cook them for about a minute on each side before taking them out and putting them back on the baking tray. When your done with that, press your bagels into the rest of your seed mixture so that they're covered with deliciousness.

Bake your bagels in a preheated oven at 200°C for about 25 - 30 minutes. Let them cool down and enjoy.. :)

I was quite surprised at how easy they were to make! I will make a few batches of them and put them in the freezer for that next weekend bagel craving!

Have you ever made bagels yourself? What recipe do you use? And what's your favourite thing to put on your bagel? Are you for sweet of savoury? Leave me a comment and let me know :)

Lots of Love,
Jess xx
