Feta & Tomato Bake | The Healthy Life

I'm sharing a new favourite summer dish with you guys today. It's become a favourite because it's soooo quick and easy to make, perfect for dinner on a nice summer's day, when you come home after a long day at work and don't really fancy standing in the kitchen preparing your food for all eternity. This requires minimum effort and therefore means maximum hours out on the balcony soaking up the evening sun. Sounds good? Well, here's what you'll need:


3 big tomatoes
a couple hot peppers (I always have a glass of them in the fridge)
a couple black olives
dried oregano
1 piece of feta cheese
olive oil
salt and pepper to taste




Chop up the tomatoes into big chunks. Cut the hot peppers and the olives and put all the veggies in an oven proof dish. This is one serving that perfectly fitted into my beautiful Portuguese stone ware (ca. ⌀17cm). Add salt and pepper to taste, be generous on your sprinkling of oregano and pour over a good amount of olive oil for that extra bit of Mediterranean goodness. Stir the mix thoroughly, then add your feta cheese on top. I cut it into four pieces to make it easier to eat later on and also because it melts much nicer in smaller chunks - obviously :-)

Yep, that's all there is to do, pop the whole thing in the oven at 200° Celsius for 20 - 25 minutes and there you go, dinner is served! You're welcome :-)
